Yummy Eats!

Chocolate Pie!
Cook pie shell and allow to cool. 

Place in a boiler and mix:
1 cup sugar
2 1/2 tablespoons flour
3 tablespoons cocoa powder 

In a bowl combine:
1 cup milk
3 egg yolks(egg whites go in a separate bowl)
1 tsp vanilla

Pour milk/egg mixture into boiler and mix over low heat. Add half a stick of butter.  Stir constantly until mixture thickens to about the consistency of pudding. Spoon into pie shell. Oh and try the chocolate too.  Yummy stuff!!  

Meringue!

Now add 1/4 teaspoon cream of tartar to egg whites.  Beat with mixer until it has soft peaks.  Then add 1/4 cup sugar and 1 teaspoon vanilla.  Beat again until it has stiff peaks.  Spoon onto top of chocolate in the pie shell.  Spread to seal edges. 

Bake for 8-10 minutes on 300 degrees until peaks are lightly browned.




Soooo Simple Chicken Sandwiches
                                     
 Combine a can of chicken(I like the chicken breast kind), sliced grapes, and however much mayo you prefer in a bowl.
Mix together.
 
And put on a croissant or toasted loaf bread and Mmmmmm. :)  Great lunch!







Taco Pizza
Does anyone remember the taco pizza that Pizza Hut used to make?  We lived in Florida when I was younger and the Pizza Hut there had the most incredible personal pan taco pizza EVER. :)  I haven't ever been able to find another Pizza Hut that still makes them and guess what?  Today I was craving one.  So to the internet I went and of course you can find almost anything you want because someone else has probably already had the same idea you have had.  Was I disappointed? Nope. :) Here's what I found. 

Taco Pizza recipe

Total Preparation Time: 15 to 30 minutes (I wish I could actually ever finish a recipe within this window, but apparently I'm a slow preparer. ;) It took me about an hour.)
Actual Cooking Time: Less than 15 minutes

Ingredients

1 pkg Taco seasoning mix
1 Head lettuce, shredded
1 lb Ground beef
1 Tomatoes, diced
1 Small onions, diced
1-2 cups Cheddar cheese, shredded
14 Inches pizza dough
16 ounces Refried beans

Preparation

1. Prepare pizza dough and press out on a pizza pan.

2. Brown 1 lb of ground beef with one package of taco seasoning mix. Don't add water. Drain ground beef and set aside to cool.

3. Warm up the refried beans. You may need to add a little water to make the beans spreadable.

4. Spread the beans on the pizza dough evenly. Top with the ground beef. Sprinkle about 1/3 of the cheese over beef and beans.

5. Bake at 400 degrees for about 15 minutes or until dough is golden and the toppings are hot.

6. Immediately cut the pizza into slices, leaving the slices in the pan.

7. Spread the lettuce over the top, sprinkle with tomatoes, onions, and the rest of the cheese.


And here's what mine looked like! It was YUMMY!


Finished Taco Pizza!  Not exactly like Pizza Hut's that I remember....but still tasty.




















Chicken Spaghetti

Total Time: 45 min.

Prep Time: 30 min.
Cook Time: 15 min.






  • 2 -4 chicken breasts
  • 1 (16 ounce) can cream of mushroom soup
  • 1 (16 ounce) can cream of chicken soup
  • 1 (8 ounce) package Velveeta cheese, cubed
  • 1 (16 ounce) can diced Rotel Tomatoes
  • 1 small onion, diced
  • 1 (8 ounce) package spaghetti noodles

  • I was able to fill two 8x8 pans.  I gave one away and froze the other for us to have later. 




    Directions:


    1. Preheat oven to 275.
    2. Cook noodles, boil chicken, and cut it up.
    3. Mix soups, cheese, Rotel, onion, and olives or mushrooms if desired in a large bowl.
    4. Add hot noodles (drained).
    5. Stir thoroughly.
    6. Bake in a large casserole dish for 10-15 minutes, until the cheese melts evenly.

    Spinach Stuffed Chicken Breast....Mmmmmm
    This is what I made tonight.  Lately the meals I've been making consist of ham or tomato between two slices of bread....so I thought I'd get fancy tonight. :)

     Added some fresh squash and tomatoes and of course a roll. 
     Prep Time: 15 minutes   Cook Time: 45 minutes  Serves: 4 (It seemed to be a lot more than this!)

    Ingredients

    • 1 (10 ounce) package fresh spinach leaves
    • 1/2 cup sour cream
    • 1/2 cup shredded pepperjack cheese
    • 4 cloves garlic, minced
    • 4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
    • 1 pinch ground black pepper
    • 8 slices bacon

    Directions

    1. Preheat the oven to 375 degrees F (190 degrees C).
    2. Place spinach in a large glass bowl, and heat in the microwave for 3 minutes, stirring every minute or so, or until wilted. Stir in sour cream, pepperjack cheese, and garlic.
    3. Lay the chicken breasts out on a clean surface, and spoon some of the spinach mixture onto each one. Roll up chicken to enclose the spinach, then wrap each chicken breast with two slices of bacon. Secure with toothpicks, and arrange in a shallow baking dish.
    4. Bake uncovered for 35 minutes in the preheated oven, then increase heat to 500 degrees F (260 degrees C), or use the oven's broiler to cook for an additional 5 to 10 minutes to brown the bacon.

    1. We make these, too! I like to add a few pecans or walnuts in with the grapes. We all love them!
